I'm not a nurse but anyways I bought ipad 7th gen from apple student line years ago, it's still working fast, but I use it for minimal stuff like online lectures, taking notes on lectures, reading and watching videos.
it lasts long time but it can get clunky when making ppt

for notetaking get an Ipad Air 4th gen WITH the apple pencil (2nd gen). That's what my sister used through nursing school. It's so good for taking notes and running apps (256gb should be good)!! and with the right case it's basically a mini laptop.
