It used to be an option when uploading with the new process, but it was removed since many users abused the upload button. It's better to have the names to keep track of the uploaders.
Many chapters don't have uploader's name do they report the chapters like the previous process to hide the name?
Yup, especially for new mangas that have volume uploads :)

Oh wait, I forgot to mention. It could also be that it was a replaced chapter. Since a new uploader doesn't have access to edit the previous uploader's published chapter, he would have to use the Imgur process. (Though there is an alternative way to replace a chapter)
