How they really are, that they haven't changed and are still villains
I think its about ein already being a villain and the dad killing/doing something bad under the emperor's order.
Take note, roselia said in the beginning that ein became a villain because of how the og roselia treated him. So roselia thinks that since she's showering ein with love, ein is still a normal boy and far from being a villain.
2nd, since the dad started changing she thinks that they started becoming a nornal family, not knowing that the dark agenda is being kept from her. Remember that one chapter where the dad received an order from the king and completed it without her knowledge as it was a mission which probably orders him to kill someone. Since roselia was afraid of him because she saw the bloody body being carried before he tries to do things secretly or atleast without roselia knowing.
They think that once roselia found out about this, she'll become afraid of them and lose the warmth and love they're receiving. Basically, lose the kind of family they have now.
