A wanted knight from a destroyed country that is currently in the the country that took them over and killed many of their knights would have absolutely no reason to believe nobility, that he has known for less tham a day, from an enemy country that looks completely different from his captain, is in fact his confirmed dead captain. Especially not one who is the fiance of Zed who he hates.
There is no real precedent for a soul coming back into another body among most of the populace. The prince didn't know about it until he had to actively ask holy people and even then you can take that as being just a story.
Even Khalid who knows Estelle extremely well, took a while to even think it MIGHT be her because she was so different and then even longer to confirm it was her.
If Estelle came out and said "hey I'm actually your captain reincarnated, I know who you are, and here are some explicit details about us to prove so" he would probably think either that she's crazy, or more likely that she's a spy and it's a trap meant to harm him and his fellow knights and that they got the information about him through information networks or Khalid, who knew them all very well and was with them for years.
