Both

Pros of WATCHING aot:
- Voice acting is top tier (in Japanese dub)
- Animation is top tier (especially the fourth season)
- The soundtrack is AMAZING
- Scenes which are easier to see when animated as opposed to reading it (fight scenes, scenes with lots of tension, etc.)

Pros of READING aot:
- More in depth regarding the information
- Great detailed illustrations

(I'm biased 'cause I only watched the anime lol)

But I DEFINITELY reccomend watching AOT. It was my first and favorite anime I ever watched, and it holds a special place in my heart
