I think it's because they were being controlled by the original author. I remember the mail lead being controlled well after he figured out that he is in love with her which led him to investigate curses and such because he was hearing voices; let alone his parents who did not interact with her and I think this is the only reason she could forgive them so easily because in the beginning she did say she was hurt by their actions in her mind they did not do it while being their authentic self and the sincere apology they gave her at end the made the final decision
The mother and father in law piss me off. Especially about the jewelry thing, the mother claims to feel bad about potentially making Edith look bad but does nothing about it, like who gives a fuck that you wore the dress Edith picked for you? Like thats gonna make up for it. Mind you she wore it weeks after Edith picked it. I don't buy that bs that she was waiting for a specially occasion. The father in law is also annoying, like they claim they are also investigating the blondie but that was also bs she could've said "I didn't do it" and boom the investigation is over. I understand that she doesnt care about these things but still Edith forgives to easily
