Everyone is making fair points about why the main characters aren’t fighting yet. My theory is that it’s because this technically isn’t the biggest threat in the series. Cath was originally the Seven Deadly Sins’ enemy first, so it makes sense that they’re the ones planning to finish what they started.
Because of that, I’m betting there’s another major villain waiting in the background, and that’s the real problem. That could also explain why Arthur and Merlin have disappeared. We still haven’t met Mordred either, who is supposed to be Arthur’s greatest enemy in the lore. It just doesn’t make sense that their king hasn’t returned yet. My guess is that after the Sins defeat Cath, someone else will take his place as the next embodiment of Chaos. That will probably be the real battle that our new heroes have to face.
