black butler!! it takes a while to get serious but i feel like that‘s exactly what you‘re looking for. also pandora hearts and maybe (vibe wise) d gray man, vanity no carte and these aren‘t fantasy but have a similar setting moriarty the patriot, gosick & aisha
also if you like dark fantasy in general i recommend the witch and the beast, dorohedoro (tho this is very gorey but sooo amazing story wise) & aftergod
