Well... There's nothing really happening after. There's some stuff happening and he stops being her knight. Tho he still gets mad at some other knights making fun of her but gets told to leave it and better move along since she's not very favoured he could get swept. Trying to make it as vague to avoid giving much spoilers of what's to come

He disappears for a while after certain things happen - although he never stops caring for Thalia even then and wants to be her knight. He shows up later on and is still the most normal put together person in the whole book loool Like on one hand I'm sad he doesn't play a bigger role or show up more, but on the other I'm kinda glad because nothing bad happens to him at least... and even when he comes back and he's no longer her knight he still shows a lot of care and support to Thalia ╥﹏╥
Like yes I love the angst but also I'm just imagining a future where Thalia and the knight end up together and none of the awful things about to take place happen..
He does show up later and Thalia offers him an opportunity again since it was “her fault” he fell out of favor.

she gets severely injured and he's dismissed as her knight for not having taken care of her well (there really was nothing he could have done as you'll see soon) and she ends up marrying Varkas and moving to his domain so we don't see the knight since he has to stay at the palace....

Actually a lot of his actions towards Thalia are partly because he understands how the world (mostly men) sees her and doesn't want her to get hurt again like when she was 15. I do take some issues with how he goes about it, like he'll hide her face from people, not let anyone touch her, etc etc and internally we can hear his reasoning as wanting to protect her, but it sometimes comes across as victim blaming?
The main thing with Varkas is he is so emotionally stunted he cannot and does not show how he feels even when he's probably jealous - you can only kinda tell because he'll narrow his eyes which is a big deal for him lol so most of his jealousy is in his POV like he's def jealous of the knight when he shows up again
I wanted to add to yours cause you worded it perfectly but I think it’s hilarious that he mentioned that in the past his body reacted to Thalia and he just chalked it down to teen hormones.
He also mentions that his body only acts that way around her. I think in one the chapters he had mentioned if he married someone else he would have had to use the medieval times version of viagra lmfao
