Gap Moe is someone who appears a certain way on the outside but is the opposite on the inside. It's heavily used with cliché. For example someone who appears cute outside, wears colorful outfit but they listen to metal.
And yes,,the author talked about the side couples and there are 2 of them which they also specified how much % they will take on the story
