it depends on a lot and we won't know for sure yet but. a poison first needs to be administered, right? we can say red chanpuru being formed is that. next, the poison will create target cells, and their goal is to target / disrupt normal biological functions. we can say red chanpuru started to spread / grow and maybe we can say recruitment? can be what's disturbing normalcy.

lets say just hypothetically, suo's master is who formed red chanpuru. they would be administering a poison to bankoku-gai. then, by recruiting various people to join red chanpuru, they are slowly building target cells. the more they form, the worse the poison will get. i can imagine that if the people in red chanpuru are "target cells", their goal is to disrupt normal functioning. red chanpuru didnt grow to be that size overnight, so we can assume this poison process started earlier on and suo cut furin off now because they were reaching an end point. suo could be trying to cut off furin as he doesnt want the poison to spread to them. like someone who cuts off their poison leg to stop it from spreading through their whole body.

I agree. Suo was acting weird when they were with the man that gave food to the children -writing it like this because we don't yet know everything about it-
