Before we start getting mad at how mc jumps to conclusions, we gotta remember that she's an extremely sheltered orphan girl who is brainwashed by her church. She's terrified and confused. Everything she's ever known to be absolutely true has been challenged and overturned in just the span of a few days. She's bound to be upset and irrational.
Btw, she's assuming from bird guy's words that he turned into a monster because he's committed some sort of terrible crime/since. Her religious upbringing has led her to immediately assume that he was talking about an actual sin, not just a mistake on his part.
From the flashbacks, we can see that this guy was absolutely loyal to the crown prince before they all "died" under some sort of attack that he was unable to protect him from. Ofc for a guy as fiercely loyal as him, that's nothing short of a sin.
