I think at the bottom of that hill there’s probably a field or portal of some sort that acts similar to save points in video games, reviving them to their first (probably not first) meeting.
Guwon said he doesn’t want Jinwoo to die which means they’re not immune to death and are capable of dying. They’re not immortal. It’s just the bottom of that hill that’s keeping them alive in a loop.
Jinwoo keeps trying to kill Guwon and himself because his subconscious mind knows that if they die outside of that field, they’d either return to the real world (if they’re stuck in a fake world which they might not be) or die for real and stop the loop. This is also backed up by Guwon saying “I don’t want you to die. Stay here with me forever”

“Here” could either mean the loop or this world.
