I promise you Eric is 100% alive, Shell shot the metal piece and that kept Eric alive. Silb confirmed this on her Twitter.
I’ve interpreted it as this was their only option, to fake his death. So they have to keep their relationship a secret, they can’t live out a normal happy couple life like they want. I’m curious to see what others say. But all I can promise you that they’re both alive,

Eric is alive and he lives somewhere near his mothers grave.Shell and Eric unfortunately can only see each other once a month in secret and they are not as happy as they and we all would wish too.The ending is bitter sweet because the climate is changing and its certain that the vampires Shell included will not be able to survive at all anymore.And on one hand that is good for the humans but you know bad for vampires and the beloved couple that will have to separate.But even if Shell dies first Eric will soon follow because since everyone thinks he is a traitor and consider him dead he has to keep his excistense secret and his identity too.So Eric doesn't have a job or any source of income.Shell supports him even for the basics.And Eric really has no potential or a future so i assume that soon after Shell is gone forever, Eric will follow.And they can be happy together for eternity in another world/life.
I'm not sure if I understand the end, so please, if don't finished to read, don't read this because the are going to be a ton of spoilers.
So at the first I thought Eric was alive, but then I reread and I notice something "If there was another option...". Correct if I'm wrong, but if we think gramatically, when he says "If there was..." means that there is not another option.
And another thing that makes me a little confused is the last line "Not in the end. But beyond that...", so that makes me think that they only gonna be happy in afterlife and now I'm thinking that Eric died and maybe Shell killed himself to see Eric again and I'm crying.
