Sorry my stupid finger hit the thumbs down on accident. Wish you could undo the thumbs up and down. Anyhoo, tokidoki has the right idea about not refrigerating potatoes and using higher heat and more oil. The only thing I would add to these words of cooking advice is to cover the potatoes in tinfoil tent for 30 minutes then uncover and broil for the last 5 minutes. The tinfoil tent will prevent the moisture in the potatoes from escaping so they will basically steam themselves internally which is what makes them taste fluffy and soft. Then the broiling for five minutes and the extra oil will make them crispy on the outside and still soft and fluffy inside. Yum!
Refrigeration will affect the cooking time as the potatoes have to heat up more,but this should only add 10-15 min to the cooking time. If they have been taken out of the fridge at different times cooking time for the cubes will vary. If you want to store them in the fridge , taking them out and allowing them to go to room temperature before hand might work.
Other factors that might affect an even bake not already mentioned:
If some of the potatoes overlap on the tray then they will have problems cooking. Non fan assisted ovens take longer and heat is not distributed evenly especially in older models.
Is anyone here an expert at baking diced potatoes? I have a problem! I keep my potatoes in the fridge 24/7 like a normal person. They are russets. They are regular size, about 5 inches in length and about 3 inches in diameter. I cut them in half horizontally first then cut down the middle of that half horizontally again, then I cut vertically to create dices around an inch thick. I season with salt and paprika and about 2 teaspoons of vegetable oil. I usually bake at 400 degrees F for 30 mins or so on a baking sheet pan. BUT recently even at 30 minutes, some dices are still hard! I looked up some solutions on google but it says to cook longer. I did. I let the potatoes cook for about 50 minutes this time. But some dices are still hard. Does anyone know why? Is it because I refrigerate the potatoes? I'm not a good cook ╥﹏╥ I need answers huhuhu. I love potatoes and they're so easy to cook but why do I still fail┗( T﹏T )┛Help.
