It’s different variations. They would mostly use hiragana and kanji. Katakana is for foreign words

yup in manga hiragana and kanji, in RL prb katakana more
if you read shounen or smth kid oriented you get furigana next to kanji (basicaly how the kanji is read in hiragana), i find it good for practicing when u a beginner

I suggest you learn hiragana and katakana because they are the easiest to learn.
