I think the ending for the 2nd couple was necessary for Shiwon and Nicholas to have a common ground (losing someone you love) so that when Daegun gets to be reincarnated, Shiwon would be there to extend his lifespan so that Nicholas and Daegun would also live a long and happy life. *atleast that's what I think.
