I never liked the yam soufflé Which was actually made with sweet potatoes (because Americans are stupid and can’t tell the difference) growing up. It wasn’t until I was much older that I learned that I actually enjoy sliced sweet potatoes with brown sugar and butter or as sweet potato fries. I had a housemate That actually mashes them up and makes them as a savory dish With butter and a bit of garlic (like mashed potatoes) instead of a sweet dish And I like that too. It’s when they don’t get cooked long enough and are fibrous that I don’t enjoy them.
I might try some then
It all comes down if the sweet potatoes are fresh or old produce. Age can really affect the flavor and texture. I mostly just boiled mine and eat as is, it’s good on its own. Or if they really are a bit old, I baked them with cheese.
