Because she is treated like a child, and her childhood was filled with being used for the gain of her father, she was never given the opportunity to grow mentally since she stopped growing physically, and I'm sure people treat her like a child because of her physical appearance. Like she said now that she has the eldest sons interest then she can stop being a tool for her father to use. She wants to live the life of a noble because her life with her father was traumatic, probably barely any nice clothes to wear, and hardly any food, which could play into account of her physical growth, not enough nutrition can play a role in a child's growth.
