I think you misunderstood Conor's intention. When he said he and Veronica will take care of the child, it doesn't mean they have to physically be together to do so. Lets say Veronica will look after the child from Monday to Thursday, that leaves Conor with the child from Friday to Sunday. He can totally take the child back to his place with Simon. When he goes out with the kid, he doesn't have to go with Veronica. That is shared responsibility for couples that are not together anymore.
About Simon saying "before you go to her let's get married", I think he was just scared that Conor will fall in love with Veronica again and go back to her. It doesn't necessarily mean Conor will go live with her
