Are you open to light novels? Mo dao zu shi's light novel is excellent, like better than many published fantasy novels i've read.... once you get over the hump of culture differences. Its a yaoi/danmei based in a fantasy ancient china cultivation situation which a lot of peeps are unfamiliar with. The characters have three names each which can be confusing. But it'll have you laughing, legit crying, and then your heart pounding within the same chapter. Though it has tragic elements, especially in the flashback arcs, it does have a happy ending. Totally worth a read. The characters are beautifully 3D and flawed. The plot is full of magic and mystery. It really is a delightful treat to read. There a manga of it here as well, and an anime, but the novel is just so much better.

If that doesn't sound like your cup of tea. Try Otoyomegatari. It's a historical slice of life manga, not fantasy, but is too beautiful to be ignored. You just want to brush you hands against those textiles. Smell the wood shavings. Taste the bread. It all looks so good! The plot follows a series of women and their newly married life in pre ww1 middle east. But don't think that that will be boring. Every aspect is gorgeously depicted, from simple every day chores to fierce bloody battles with neighboring tribes over politics. It really is a masterpiece.

If you really can't do without fantasy, ( or are craving something actually completed) From Far Away is another beautiful piece of work. Though the trope has been done to death; girl falls into another world, finds a handsome mysterious warrior, saves the world.... this one is just so wonderfully balanced and sweet with characters you'll fall in love with. I read it again and again, at least once a year. It just fills my heart with warmth and wonder. Its not perfect, but it's close.
