That's because her weight was never the focal point. Neither of the story nor of her being bullied. They would've bullied and mistreated her the same even if she was super skinny. That's why they don't focus on it. Honestly I'm already happy enough that they made it clear that yes she wants to be skinny but not just for appearances but for her health and showed her doing so in a healthy way and not just magically.
That's because she is confident in herself regardless of her appearance, the FL however want to be healthy, physically active, and comfortable like her first life's body and that essentially means losing weight.
