I'm just going to left this random 3am thoughts in here. I have a theory for this manga. I think Minchan is not Seonho reincarnation. Instead, at some point in the future (I'm guessing Bihwan is going to die or at least get in a dangerous situation later), Minchan would go back to Bihwan's time in the past. Here Minchan would call himself Seoho and met the past Bihwan. Bihwan in the past would meet Minchan (Seoho) for the very first time and fall in love. Later, Minchan (Seoho) would imprison Bihwan to freeze his time so Bihwan can meet Minchan in the present time hundreds of years later.
This explains why there's no record of Seoho's birth in the past timeline where Bihwan came from, because Seoho is Minchan who came from the future. This also explains why Bihwan said that Seoho sometimes would look at him with (kinda) sad eyes. And this also also explains why Seoho never wanted to go all the way with Bihwan, because Seoho (Minchan) developed feelings for the future version of Bihwan, instead of the past version of Bihwan.
But if this theory is true, I think it would be rather depressing because their timeline would not allow them to meet their lover fully. They could never falling in love in sync. They are forced to meet the past version of their lover which has no clue of who they are.
