Early on in their marriage prince was trying to find what does Doram likes from his friend that now works as palace maid. She told him that Doram likes acorn jelly. So the prince decided to arrange a whole 'nice' walk of him, Doram and company to go up the mountains in winter to find some acorns. But since he didnt explain why poor Doram felt like was punished. Until he realized that it was Prince's awkward way to try to grow closer to him. Ta!

Well, I think ch. 51 they’re most likely used to symbolise how Doram feels without the prince and as a literary device to connect them. Since it’s a memory he and the prince share Doram keeps collecting them unconsciously hoping they’ll fill the void left by the hate and rage returned to him, and (maybe?) lessen the bitterness and twisted feelings of not being with the one he loves because of that resentment. At the same time the acorns are picturing him at this moment in the story - an empty husk.
