I guess start with Phantom Blood (part 1) then Battle Tendency (part 2). IMO part 3 is where it gets good. If you dislike reading older manga, you can watch the anime for the first two parts and then switch to the manga when you get to part 3.
I guess since they didn't actually NUMBER the titles you might be confused, so here's in the order:
1-phantom blood, 9 ep
2- battle tendency, 16 ep (it's the same season as part 1)
3-stardust crusaders, 2 seasons and 48 ep
4-diamond is ubreakable, 1 season 41 ep
5-golden wind, it's still airing but by the time you're done it might be over.
