Mexican food.
There are so many different cuisines depending on the region of the country, but most people only know the most famous/common ones like tacos or mole.
For example, in Guadalajara there’s a dish called carne en su jugó, but a lot of people not from that area have never eaten it or even heard of it.

Ethiopian food man. I don’t like injera but I can’t lie the way that doro wat has me feeling when there’s four eggs in my bowl… tearing up at the thought of it. Great vegetarian options too.
