he has white hair after he comes out of the rift. he has to keep dying it to make it black again. that's why Sayoung says it looks gray at one point. i won't spoil but there's a reason for it
He both dyes it, and sometimes there is just art mistakes. An earlier chapter he has white hair, yet in a flashback it is mistakenly black.

His hair turned gray from the dungeon. There was a flash back when he exited it, logically it should've been silver like it was in chapter 1, but the author mis colored it as black.
It is gray, he just keeps dyeing it. There is a chapter here before he start to work in the hangover soup, he dyed it black. Of course if you are stuck for so long in a dungeon, natural hair color will grew (I dunno how he keeps his haircut there) So that’s why when he gets out of the dungeon, it back to its original color to gray.

The dungeon sends him forward in timeish. I forget how much time passed in the real world, but to him he was only there a short time, but years irl. It's also why he didnt age much, but poison dude grew up.
