What if it was actually a straight dude who turned gay/bi.

? This is just my opinion, but i don’t think people just "turn" gay or bi. It’s more like they realize their true sexuality over time, or their attractions shift. even if a guy dated a woman before and turns out to be fully gay later, it's not "turning gay", it's just him discovering himself after trying to fit into societal norms

but if he still likes both, then he’s bi, right? Which brings me back to my exact point, the story could just acknowledge them as bisexual instead of framing it as "straight turned gay" like being bi doesn't exist

Bi erasure is a general widespread thing. It's similar to how intersex, nonbinary or gender fluid is often coupled to transgender rather than acknowledging that some humans—much more than we even know—do not fit into one simple category their whole life.

A bisexual man who gets with a woman is still bi, not straight. If he gets with a man, he's still bi not gay. And if a bisexual man gets with a trans woman, a trans man, an intersex person, a nonbinary person or a gender fluid person — he is still bisexual.

One of the things I noticed in many gay x straight, gay for you, and yaoi in general is that at some point, someone will clearly say they decide to not care about gender.

Which is why it surprises me that bisexual - which means regardless of gender - isn't used more.

That might be changing, though. When looking for subgenres and tags to search here, I saw that "bisexual" was on the list of most popular tags. And with the recent decree about LGBTQIA+ Education in Japanese schools, we might see a shift in stories.
