I’m not a musician at all so can someone explain something to me? When they talk about interpreting a piece, what exactly are they interpreting? I know this is a massive oversimplification, but I thought you just play whatever’s on the sheet music? Thanks!

In other words, it's translating. It's trying to put yourself into the headspace of the artist who created the original piece and it's story behind it, capturing emotions and themes.
An example could be This story is the author's own interpretation of Eurydice and Orpheus in Greek Mythology.

I'm not great at explanations but I hope this helped in a way.

It likes when actors can all read the same line of dialogue but portray the scene completely different because of their own interpretation of what the scene should be. If u have ever seen casting tape, you can see the differences.
