Most of the moments of Teach seeming like an unreliable narrator or acting ooc are probably his past memories surfacing! - awakening in the kitchen about to chop off his hand = trying to cut guwon's ring off - strangling guwon in his sleep = a past attempt to murder him - feeling completely at ease handling a gun = the numerous times he's been out with the hounds - lack of a flinch reflex = that shit simply doesn't phase him!
Jinwoo's fatal flaw that dooms him to this cycle is that he can't see suffering and not try and change things, so I hope in s3 we get to see his past attempts bc that's a lot of dead versions of himself and Guwon!
