No idea what he’s doing there but it probably has to do with older, more powerful families and alliances and all that. It could also be research or retrieving files/information or any other number of things also. As far as I know they don’t specify a reason why unless it was done in a previous chapter. Since I can’t read hangul I wouldn’t know so we’ll just have to wait and see.
As for why he might die, well. There’s going to be quite a large number of vampires who bear a grudge against Edric because of everything he’s done managing the clans kin system, so he’ll probably get attacked at least once while over there. There might even be some who could seriously do some damage to him - though honestly I think that possibility is pretty slim since Edric is....very strong. And plot armor, I hope (though I do feel like he raised some flags earlier on...but hopefully they won’t amount to anything permanent)

Minhoon seems to be doing a damn fine job taking over most of Edric’s duties, negotiating with the various vampire families, and dealing with Elian (everyone’s favorite dilf) being an ass as usual and sticking him with all the work...Minhoon you angel you’re not trained for this at all but you’re doing so well ;-;
Also,
UHHH EDRIC IS IN EUROPE I hate that the chapter just ends there with him in Europe and Minhoon telling him not to die over the phone. Hello Sir What Are You Doing And More Importantly Did You Take Sungryul With You Or Did You Leave Him In Korea. Does this mean we’ll finally get a better look at them and their relationship god (haejin) I hope so,
