Dr.seok telling Major Kwak that he wants to live was NOT him begging him to spare him after he got bitten. Major did hundreds of tests on him until the tests turned negative while staying by his side the entire time, he had ZERO intentions to kill him. Dr.seok telling major kwak he wanted to live was because because he felt empty after the death of his mother. It was in his monologue in the novel later on that he just lived without feeling anything. Him saying he wanted to live, was him confessing to Major kwak that he indeed wanted to continue living after being in a life or death situation, the wish which will be taken to heart by major kwak who did everything in his power in the rest of the story to make sure he granted that wish.
