Actually, they can't totally skip it. It later becomes important.
So far the first time in "Desire me if you can" it was mentioned, that one they skipped, was when Grayson asked his father to help him become a firefighter. Grayson does the ear twitching uncontiously when he is exited, it later also is an indicater that he feels something. He inherited that trait from his omega father Koi, and Ashleys had been weak for it. In the LMUIYC etxras it saved him from Ashley's wrath. And well Dane...is also weak for it.lol

And that makes this couple one of the best in omegaverse!
