Because bologna is name after a city in Italy, Bologna. Etymologist do not agree on exactly how it happened, but at some time when the word bologna (Bo-lo-nya) was adapted to English the pronunciation changed and, apparently, the spelling, too. I've never seen bologna spelled as bolony/boloney.
