We typically only call someone uncle when they are biologically related. The other options are "mister," which sounds silly in this context, or "lord," which could work since Seth is a god, but doesn't make sense either. I honestly don't understand what you mean when you say Horus holds him in high regard, because I don't think he does. He clearly likes him a lot, but he doesn't actually respect his wishes.

idk if you realized but that's how many people around the world address each other, including korean which is this bl's original language. horus cannot call seth by his name because the familial hierarchy doesn't allow it, just like how i can't call my uncle by his name in my own language. even in english, calling your elders by their name is only allowed if the family dynamic is chill or if the older person allows it. if not then you just call your uncle by "uncle". horus cannot call seth by his name willy nilly unless seth allows it lmao.
