well, you start off by watching the 1995 series, and once you're done with that, proceed by watching the films Death & Rebirth followed by The End of Evangelion. these two films conclude the series and kinda act as the final episodes of the series.
after you've seen those, you can watch the rebuild of evangelion. here's the order:
