My default is "oh nothing much, what about you?" Because 99% of the time they're asking because they want YOU to ask them back what they did. They're itching to tell you their activities but don't want to just randomly spill so they initiate it to you first before they talk about themselves for the next 30 minutes. These people actually don't care about you or your activities. Trust.
