You’ve probs read it but Ike Reibun is pretty good at that, Kobi no Kyoujin follows that a bit (although only for the first volume or so) There’s a pretty good thread about this on Baka Updates :) so you could reference that.

I was thinking, would anyone be interested in an app that teaches you to write your essays tailored to your audience and goals? (e.g: Admissions, tell a story that showcases your strengths & weaknesses)

Ask an english teacher. It's what I did. I brought them to her and she basically told me what they wanted and how to get there.
