as mentioned by the translator, yoshinoya is a fast food chain in japan. matsuya is basically its competitor, since both are known for gyudon and are in the same price range

青春 (seishun) is the kanji for “youth” or “adolescence”. it contains blue (青 “ao”) and spring (春 “haru”), which alternatively could be read as “ao haru” to have the nuance that youth is the best time of your life (e.g meeting friends, having your first love, etc.). if you know the shoujo manga/anime ao haru ride (or blue spring ride in english) this is where its name comes from.
