You're not entirely wrong. There are a lot of repeating plots (villainess Isekai, OP mc Isekai, actually any Isekai these days).
It has become a genre, however each author tries to be subversive in some way
("What if she was reborn as a villainess, but still had to act that way, because of the system!" "What if she was reborn as a villainess, but decided to start a business!" "What if she was reborn as a villainess, but she was a great magician!") and it works for a the first couple of chapters. The first five or so chapters are unique, however after that premise is explored, the plots begin to resemble each other again, because of the authors have a good idea for an origin of the character, but not how to actually develop their story.
With that said, that's only in those specific genres (and even those have unique stories somewhere)! If you check out stories that don't fit the stereotypical tags, you can find some real gems. What kind of things interest you?
