Because it’s still an accurate label, and I don’t think the fact that it started as an insult means people have to be ashamed of it.

There was a serial killer between the 1970s and 1990s that killed 18 women.
Recently in 2023 two unidentified bodies were found in the river, there's been a few more uncovered since. Speculated to be unrelated though. The river is really deadly so it's hard to tell what's accidental, what's suicide, and what's dumped after a murder when the bodies...... 2 reply

Romance whise I think people like it because its basically an extreme way to say that the Love Interest definitely absolutely with certainty only has eyes for MC. That kind of plot is considered romantic/fun if the Love interest attractive. Or if the reader itself likes the Love interest.
